I love this vanilla pudding because not only is this smooth miracle yummy, it is also easy to prepare. This is a simple 3 ingredient dessert that produces a silky smooth irresistable pudding. Of course you can add special ingredients like cinnamon or chocolate for an extra yummy dessert. Or just keep it simple. But hey, fresh oranges goes phenomenally with chocolate. Just sayin’!
It has been about four years after my cancer went into remission and I am now just starting to feel like my self again. The chemotherapy was so intense and difficult that it has taken me this long to heal.
Along the way I was still eating foods that didn’t agree with me. One would think that if one had cancer that they would automatically eat healthier. Not exactly how it works. I was consuming too much sugar and fatty foods. I needed to switch gears and start eating foods that is gentle on my system and still taste yummy.
This pudding recipe is a bit high in sugar, but like anything in life, it’s a process. I’m still getting used to eating natural sweeteners like stevia. I love the taste but dropping the real sugar is so hard! But I will conquer this! LOL! Eventually I will either lower the sugar content in my recipes or use naturally low glycemic index sweeteners.

I love vanilla pudding, especially homemade, but usually make it using the pastry cream method (lots of eggs), never tried it with silken tofu, what a great idea! I’ll be making it soon for a friend who is allergic to eggs. Thanks for this post!

Love the look of this clean and sophisticated pudding! I’ve only made a chocolate pudding with silken tofu so excited to try a different pudding. I found it interesting what you were writing about natural sugar alternatives as I just received a package of date sugar that I ordered for the first time. I am also trying to gradually replace refined sugars. Date sugar is just dried pulverized dates and is supposed to be full of nutrients.
