This delicious Greek yogurt parfait is infused with the freshness of grapefruit zest, honey and a rosemary infused simple grapefruit syrup. I was simply amazed with how beautiful rosemary pairs with grapefruit. The Baker’s Almanac has the best chart for describing the most delicious herb, spice and fruit parings.
I certainty don’t eat enough grapefruit. I forget how deliciously tart and pleasantly bitter they taste. Not only that, they are low in fat and contains many beneficial nutrients such as a strong concentration of vitamin C, calcium and magnesium.

Ingredients you will need for Rosemary Infused Grapefruit Parfaits
Greek yogurt: I chose a 2% milk fat Greek yogurt. I prefer Greek yogurt because it’s thick and creamy. It also has a tartness that goes well with fruit.
Grapefruit: I grabbed some red grapefruits from my neighborhood market for this tasty parfait. This parfait would also be a mazing with ruby red or pink grapefruit too!
Lemons: A healthy squeeze of a lemon added to the yogurt will amp up the freshness of the parfait.
Rosemary: Fresh rosemary is a must for this parfait. I would steer away from dried rosemary.
Crumble: I made a crumble made with flour, butter, walnuts and rolled oats.
This is how you make Rosemary Infused Grapefruit Parfaits
Rosemary infused grapefruit simple syrup: This is the best part. I sliced 2 large grapefruit, removed the peel and membrane. I dropped the slices into a 4 quart sauce pan with a few sprigs of rosemary. The grapefruit is so juicy you wont need to add any other liquid. Unless of course, you have grapefruit liqueur. Then, WOW!! Save the extra for cocktails!
Grapefruity yogurt: I used about two cups of 2% Greek yogurt, and mixed in fresh grapefruit zest, a touch of honey and a squeeze of lemon juice.
The crumble: I had some left over crumble mixture from the Strawberry Lime Crumble I made the other day. I had kept it in the freezer. I added in more rolled outs and crushed walnuts, and baked it at 350°F until the crumble turns a slight brown color.

Ingredients
The Crumble
- 1 cup unbleached all-purpose flour
- 1/2 cup unsalted cold butter, cubed
- 1/2 cup rolled oats
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Rosemary Infused Grapefruit Simple Syrup
- 1 large grapefruit
- 1/3 cup granulated sugar
- 2 sprigs of rosemary
Grapefruit Yogurt
- 2 cups Greek yogurt
- 1/2 lemon
- 1 tablespoon grapefruit zest
- 1 teaspoon rosemary infused simple syrup
- 2 tablespoons honey
Instructions
Grapefruit Yogurt
- Whip together the yogurt, lemon juice, grapefruit zest and honey in a medium size mixing bowl. Set in the refrigerator while you prepare the rest of the parfait.
The Crumble
- Preheat oven to 350°F.
- Whisk together the flour, sugar, cinnamon and salt in a medium sized mixing bowl.
- Cut the cold cubed butter into the flour mixture with a pastery cutter or fingers until you get a course sand texture and can easily clump together when pinched.
- Mix in crushed walnuts.
- Spread oout evenly onto a baking sheet and bake for 10 minutes or until the crumble turns a light golden brown.
Rosemary Infused Grapefruit Simple Syrup
- Add the cut up peeled grapefruit, sugar and srpigs of rosemary to a 4 quart sauce pan.
- Bring to a boil and let simmer on low heat for 10 minutes or until the liquid reduces into a syrup. It will become more syrupy as it cools.
- Let completey cool.
Notes
A few minutes before the simple syrup is finished reducing, remove the sprigs of rosemary.
You can omit the butter from the crumble for low fat crumble. You can also top your parfait with homemade or store bought granola.
