- Medjool dates
- Oat bran
- Rolled oats (not instant or quick oats)

INGREDIENT NOTES
- For the absolute freshest parfaits, assemble them just before you serve.
- Keep a watchful eye on the granola as it bakes. The granola can easily over bake.
HOW TO MAKE MIXED BERRY & GRANOLA CHIA PUDDING STEP BY STEP
Step 1 – Combine the oat milk, chia seeds, vanilla and agave syrup in a bowl. Set aside.
Step 2 – Add the granola ingredients to a mixing bow and mix well. Spread out on a parchment lined tray and bake. Cool.
Step 3 – Add the compote ingredients to a sauce pan and simmer for 5 minutes. Cool.
Step 4 – Assemble your parfaits!
RECIPE TIPS AND TRICKS
Like with any yummy parfait, always assemble them just about before you serve them. That way the layers wont spread out.
STORAGE AND REHEATING
- The granola can be stored at room temperature in an airtight container or baggie. The granola will last up to a week.
- The compote and the chia pudding can be stored separately. They will last several days stored inside of an airtight container.
ADDITIONS AND SUBSTITUTIONS
- This gorgeous parfait pairs well with fresh whipped cream topping.
- Substitute the berries with your favorite fruits. A Granny Smith apple compote would be so yummy with this parfait.
FREQUENTLY ASKED QUESTIONS
What should I do if the chia pudding is too runny?
- Add about two teaspoons to the pudding, mix well and let stand for a few more hours. This will remedy the liquified pudding.

Description
A delicious plant-based pudding parfait with layers of super nutrients. This parfait is your one-stop shop for all things nutritious!
Ingredients
Chia Pudding
- 3–4 Tablespoons chia seeds
- 1 1/12 cups oat milk
- 1/2 teaspoon vanilla extract
- 2 Tablespoons maple syrup or agave syrup
- pinch of sea salt
Mixed Berry Compote
- 1 cup blueberries
- 1 cup raspberries
- 1 cup blackberries
- 1 Tablespoon of water
- 1/4 cup maple or agave syrup
- Squeeze of a lemon wedge
- 2 Teaspoons arrowroot powder (if needed)
Date Granola
- 10 Medjool dates, chopped
- 1/2 cup oat bran
- 1 1/2 cup rolled oats (not instant or quick oats)
- 3 Tablespoons flax seeds
- 3/4 cups chopped walnuts or almonds
- 1/2 cup almond meal
- 1/2 cup shredded coconut
- 1 Teaspoon cinnamon
- 1/4 cup maple or agave syrup
- 1–2 Tablespoons water
- A pinch or two of salt
Instructions
Chia Pudding
- In a mason jar add the oat milk, chia seeds and maple syrup. Stir and leave out for 20 minutes. After 20 minutes, break up the already thickened mixture with a spoon, cover with a lid or plastic wrap and place in the refrigerator for 3-4 hours or overnight. The mixture should now be a thick and creamy pudding consistency.
Mixed Berry Compote
- In a medium sauce pan on low temperature, add the blueberries, raspberries and blackberries, agave syrup, water and lemon juice. Continually stir until the berries have broken down and the the liquid has thickened. It will continue to thicken as it cools, but if it seems too wet, mix together 2 teaspoons of arrowroot powder to 1 tablespoon of warm water and add the slurry to the compote. Stir until mixture thickens. This all should take about 5-7 minutes. Set aside to completely cool.
Date Granola
- Chop the dates and set aside. To a medium sized mixing bowl add oats, oat bran, crushed walnuts, coconut flax seeds, almond meal, cinnamon and mix until well incorporated. Add the dates and mix until the dates are will incorporated and coated. Next, add the water and maple syrup and gently combine. The granola mix will be slightly wet but not mushy. Lay mixture out on a cookie sheet. Once spread out, the mixture should be about 1/2 inch thick. Set in an oven at 250° F for about 15-20 minutes. Check often and pull out when the mixture turns a golden brown. Let cool completely. Once cooled, you can break apart the granola into chunks and enjoy!
