These cookies warm my heart. I’ve been on this dessert kick that isn’t typically on my radar. When I do make desserts, I usually make them with pant-based ingredients. However, my perspective on food waffles back and forth between the health-level of the foods I make. Whether it be plant-based, gluten-free or with sugar, I want to offer something for everyone.
Limes have originated within tropical Southeast Asia and South Asia. the true lime that originated in Malaysia, is now known as the Mexican lime or key lime (Florida Keys) for locations of commercial production. Limes are such a special fruit. With a very unique flavor, you can enjoy them in so many ways both savory and sweet.

- all-purpose flour
- powdered sugar
- cornstarch
- unsalted butter
- 4 limes
Equipment
- Mixing bowls
- wooden spoon or rubber spatula
- measuring cups and spoons
- plastic wrap
- cookie sheet
- parchment paper
- spatula
- cooling rack
- 1 3/4 cups all-purpose flour
- 1/4 cup cornstarch or arrowroot
- 1/2 cup powdered sugar
- 1 cup unsalted butter
- 2 tablespoons lime juice
- 2 tablespoons lime zest
Glaze
- 1 1/4 cups powdered sugar
- 1 teaspoon ime zest
- 3 tablespoons lime juice
Garnish
- freshly grated lime zest
- lime zest
Instructions
- Line cookie sheet with parchment paper. Set aside.
- Whisk together the flour, cornstarch and powdered sugar to a large mixing bowl. Set aside.
- Beat butter in a separate mixing bowl until smooth and fluffy.
- Add the flour mixture and beat at low spead until a dough forms.
- Shape the dough into 2 – 10 inch logs on a lightly floured surface.
- Wrap in plastic wrap and refrigerate for 2 hours, until firm.
- Heat oven at 350 degrees.
- Cut into 1/4 inch slices with a sharp knife.
- Place on cookie sheet 1 inch apart. Bake for 10-11 minutes, until barely edges are lightly browned.
- Remove and let cook for a few minutes before setting them on a cooling rack.
- Mix together the powderded sugar, lime juice and zest in a small mixing bowl until you reach the desired consistency. Brush or dip into the glaze, sprinkle with lime zest and let set for about an hour. Until the glaze completely dries. Enjoy!
