This has got to be one of my favorite snacks to eat. Sometimes I’ll even eat this as a lunch meal. Not only is it easy to make, Chèvre Comet Tomato toasts are unbelievably delicious. During my cancer remission journey I am trying to eat healthier and prepare meals that have few ingredients and not too complicated to make. I don’t think I will recoup the physical health I once had prior to chemo, but I can optimize the heath I do have.
I’ve always been a fan of goat milk products. Especially goat cheeses. I love the flavor and I also love that goat’s milk is more gentle on the stomach than cows milk. It’s a total win-win! I can get into all the technical jargon and explain fat globules and curdling, but instead I will spare you that and just say that goat’s milks is easier to digest than cow’s milk. I think the ingredient that really makes a difference in flavor layering 0f these chevron comet tomato toasts is the tomato. Using fresh, ripe and in season (if possible) tomatoes adds such a freshness that you’ll just want to pop in a comet tomato all by itself.
The idea behind creating these recipes is to offer choices for those who are healing from chemotherapy. Depending on the treatment, the chemicals can impose life long challenges. A treatment that is supposed to eradicate the cancer from our body, but negatively impacts everything else. Such a weird contradiction. I think the most difficult side effect is what is called chemo-brain. Definitely exacerbated any prior symptoms of depression and focus.
