Blueberry Almond Bread Pudding

An easy bread pudding made with french bagettes, a creamy custard. fresh blueberries and toasted almonds.

  • 2 large baguettes
  • fresh bluberries
  • eggs
  • oatmilk
  • oatmilk creamer
  • raw almonds
  • honey
  • vanailla extract
  • almond extact
  • cinnamon 
  • nutmeg
  • fine sea salt

Measurements

  • 2 large baguettes, day old
  • 1 cup blueberries, whole
  • 1/4 cup crushed or sliced almonds. toasted
  • 3 eggs + 1 yoke
  • 1 cup oatmilk. slightly sweetened
  • 1/4 cup oatmilk cleamer. sweetened
  • 1 tablespoon honey
  • 2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1 teaspoon cinnamon
  • pinch of nutmeg
  • 1/8 teaspoon fine sea salt

Instructions

  1. Prehat the oven to 350° F. Line an 8 1/2 x 4 1/2 inch bread pan with parchment paper.
  2. Pull apart the baguettes into large chunks and place them in the baking pan, set aside.
  3. Add almonds to a dry pan and toast until the almonds can easily be broken apart when pressed, until light brown. Crush the almonds and set aside.
  4. Dice apples into large cubes, and add to a pan with butter, honey, and cinnamon. Mix until the liquid bubbles, then remove from heat.
  5. In a large bowl, combine the oatmilk, creamer, eggs, vanilla and almond extract, whisking to combine.
  6. Whisk in the cinnamon, nutmeg and salt until well combined.
  7. Scatter the bluberries and almonds on top and in between the chunks of bread.
  8. Pour the wet mixture over the bread, press bead down to saturate and set aside to soak for 15 minutes.
  9. Bake for 30 minutes, until top is a golden brown.
  10. Allow to cool slightly before serving. Dust lightly with confectioners’ sugar or drizzle with honey.
  11. Serve and enjoy!

Notes

  • Serve with your favorite icecream or coconut creme fresh.
  • I decided to used oatmilk creamer and just omit the sugar since the creamer is already sweet. With that and the apple compote, it was the perfect amount of sweet. You can add more sugar if you prefer a sweeter bread pudding.
