This one. YUM! On a whim I decided to pull out all the stops and create this tower of fierce yumminess. It’s quite simple once you investigate.
What is Tempeh?
Tempeh is a plant-based protein source. It’s made from fermented soybeans that have been formed into a block, though store bought tempeh often includes additional beans and grains. Tempeh offers a host of different health benefits and nutrients.
I LOVE tempeh. I was first introduced to this fermented food several years ago when a friend made me this salad with pan-fried tempeh on top. I was hooked! My usualy go-to brand is Lightlife tempeh. They come in various flavors like Buffalo or Smokey Bacon, but if you prefer to go plain, this would be the best option if you are adding tempeh to a chili or transforming it into a sloppy-joe style sandwhich.
Tempeh can be cooked or eaten raw. I’ve been known to nibble on a piece or two while I’m preparing it. It’s crunchy nutty flavor is unique and fresh. I do prefer my tempeh cooked, because tempeh absorbs different flavor so well. Soy sauce, BBQ sauce or simple olive oil, salt and pepper.
A fresh NYC everything bagel is another favorite that is a regular staple in my home. I usually pick up a few at the local bagel shop and freeze them. So so goood! Layer a couple of sunny side up eggs and BAM!

Description
A simple yet SCRUMPTIOUS breakfast sandwich with shoyu sauce marinated tempeh. Topped with sauted red onion and two fried eggs. This breakfast sandwich is guaranteed to curl your toes!
Ingredients
- 1 Everything bagel
- Block of tempeh
- I lemon
- 1 Small red onion
- 2 Eggs
- 1/4 Cup shoyu sauce
- 4 Tablespoons olive oil
- Salt and pepper
Instructions
- Cut tempeh block in half. Cut the halves so that you will have 4 thinner squares.
- In a zip-loc bag, add tempeh, shoyu sauce, lemon juice, pepper and olive oil. Let marinade for about 5 minutes (see notes).
- Cut three slices of the red onion.
- In a cast iron skillet, add two tablespoons of olive oil and the sliced onions. Saute until they become transluscent. Set aside.
- In the same skillet, add another tablespoon of olive oil and fry tempeh for 3-4 minutes on each side or until the tempeh gets a golden brown crust on both sides. Set aside.
- In the same skillet, add more olive oil and fry two eggs, sunnyside up.
- In a toaster, toast the everything bagel.
- Layer with one slice of tempeh, onions, another slice of tempeh, onions. Layer the two sunnyside up eggs on top.
- Enjoy this glorious breakfast sandwich!
Notes
- You can enjoy this breakfast sandwich with sliced cheese, tomatoes and bacon!
- The tempeh will absorb the marinade quickly. Marinade the tempeh no longer than 5 minutes.
