What is a Delgano Matcha Latte?
This particular delgona is made with aquafaba. Aquafaba is the liquid that you drain after opening a can of chickpeas. So, aquafaba is chickpea liquid. Crazy, right? Aquafaba is a wonderful egg white replacement when adhering to a plant-based diet.

What is Matcha and where does it originate from?
Japanese Matcha is a fine powder made from green tea leaves. Matcha is cultivated on two Japanese regions: Uji in Kyoto and Nishio in the Aichi prefecture. A beautiful green pigment that not only tastes yummy, but is pretty good for you too.
How to make a Dalgona Matcha Iced Latte
Matcha: is the star of the show. The celebrity more and more people are drinking everyday. I use organic Matcha tea, and it can be found in most super markets.
Coconut milk: A smooth and creamy coconut milk from Califia Farms is perfection for this iced latte. It’s unsweetened, deeply creamy and intensely smooth.
Sugar: You can use either granulated sugar or coconut sugar. It’s recommended to use a fine grain sugar, but coconut sugar will work too.
Aquafaba: Say, what? Drain that can of chickpeas and use the liquid to create a meringue. That’s what I did for this Dalgona. Whip the liquid, add the sugar and you will eventually get a stiff peak meringue.

Iced Dalgona Matcha Latte is a creamy grean tea froth over coconut milk and ice.
Ingredients
- 2 tablespoons aquafaba (liquid from can of chickpeas)
- 1 tablespoon granulated sugar
- 1/2 teaspoon Matcha powder
Instructions
- In a small bowl and a hand mixer, beat the chickpea licquid until you get a thick froth.
- Add the sugar and continue to beat until you reach stiff peaks.
- Sift in the Matcha powder, and whisk to combine until well incorporated.
Notes
Don’t over do it with the Matcha powder. A little goes a long way. Of course, if you prefer your Matcha tea stong, go for it!
The aquafaba doesn’t whip up like egg whites, but pretty darn close. So, when you beat the liquid and sugar, stiff peaks will be different than eggwhite stiff peaks.
