The closer I get to beginning treatment for my second time with Hodgkin’s Lymphoma, the more I want to get it right this time when it comes to the food I eat.
This salad fits the bill. A simple healthy and delicious salad with avocado, English cucumbers and red grapefruit. Dressed with a fresh cilantro-lime vinaigrette.

After the first time I was diagnosed with cancer, I went on this all-bets-are-off kick and ate every unhealthy food I could get my hands on. It wasn’t as if I didn’t care, because I really did. It was because I needed comforted through a very difficult chemo regimen, and unhealthy food was that security for me. Oh, those Stouffer’s lasagnas were EVERYTHING! (Pretend I just didn’t say that!).

How to make an Avocado Cucumber Grapefruit Salad
Avocados: Choosing the perfect avocado is a very precise action. When picking out avocados, check for dark brown skin and that isn’t too soft or too hard, but somewhere in between.
Cucumbers: I love English cucumbers. They are crispier than the standard cucumber and seedless. I personally love leaving the green outer layer on my cucumbers. The green outer layer is yummy, adds texture to the dish and the green outer layer is the most nutrient dense part of the cucumber.
Grapefruit: Red, pink or California grapefruits will certainly do for this fresh summer salad. You will want to peel away the white membrane from the slices.
Vinaigrette: Choose your favorite dressing, or make Cilantro Lime Vinaigrette that I prepared special for this salad.

About avocados
Avocados are a nutrient dense fruit that grows on a tree! Nope. That wasn’t a typo. Avocados are classified as fruit. I know, nuts, right? Nope, berries. The avocado is actually a berry. Avocados fit all the criteria for being a fruit.
Avocados are cholesterol free and contain a healthy fat. I cup of avocado contains 234 calories and 21 grams of fat and 0 cholesterol. Also many vitamins and minerals too. Such as vitamin c, vitamin b and potassium.
Have you ever had a dessert made with avocados? Well, I’ve gotta say. You must try a dessert made with avocados. If you get the opportunity to try chocolate mousse that is avocado based, you will be so glad you did!
About cucumbers
English cucumbers are a hot house variety cucumber. English cucumbers are long, thin and with a dark green skin. You’ll recognize these beauties at your local market, because they’re wrapped in plastic.
It is understood that English cucumbers have a non-existent flavor, but I beg to differ. Their flavor is on the mild side, but a yummy flavor nonetheless.
About grapefruit
I think we all know what a grapefruit is. There are many varieties of grapefruit such as ruby red, pink and California. Ranging from bitter to sour. Here’s a bit of trivia. Grapefruits stem (get it, stem?) back to the 18th century, as a result of crossing a pomelo and an orange.
Grapefruits are low in calories but rich in nutrients. Grapefruits are an excellent source of vitamin A and C. They can aid in digestion and provide a rich source of antioxidants.

Description
A 5-ingredient salad made with English cucumbers, avocado, red grapefruit and a lightly sweet cilantro-lime vinaigrette.
Ingredients
- 1 large French cucumber, cubed.
- 1 ripe avocado, cubed.
- 1 grapefruit, sectioned and cubed.
- cilantro lime vinaigrette (or use your favorite dressing)
- Cilantro leaves
Instructions
- Throw all the veggies and fruit in a salad bowl. Mix.
- Drizzle your the vinaigrette or your favorite dressing over the top.
- Top with seeds, nuts or cheese.
